ounces gin
¾ ounce fresh grapefruit juice
½ ounce thyme simple syrup
1 cup ice cubs
2 ounces champagne (I used rosé champagne)

Grapefruit and Thyme French 75

You may not have noticed, but I am a little obsessed with citrus right now. Particularly grapefruit! It’s a flavor that I don’t think of often throughout the rest of the year, but in the winter when nothing else is in season, citrus really shines through!

Classic French 75’s have been a favorite cocktail of mine for quite some time. They are refreshing, not too sweet and feel very celebratory! In honor of citrus season and also with Valentine’s Day around the corner, I thought I would dress this drink up with grapefruit juice, thyme flavored simple syrup and rosé champagne. The result is a delicious, herby grapefruit drink with a beautiful pink tinge to it. If you’re thinking of serving this drink at a party, the recipe scales well and looks wonderful in a pitcher or dispenser. Perfect for any pink themed parties you may be throwing in the coming weeks!
